This protein-packed cookie dough ice cream from @behindthesnack features Bored Cow to make the perfect vegan treat in the Ninja Creami.

Cookie dough bites combined with a creamy vanilla base make this a cookie lover’s dream, but instead of being reserved for a special dessert, the protein content makes it a perfect breakfast or post-workout snack. If you don’t have a Ninja Creami, give it a whirl in your blender for more of a milkshake vibe – you can’t go wrong with cookies and milk!

IN THIS RECIPE

  1. In a Ninja creami container, pour all the ingredients needed for the ice cream base, mix it with a frother and freeze overnight.

  2. For the cookie dough bites, mix the coconut oil, brown sugar and Bored Cow together until combined, and then and mix in the rest of the ingredients.

  3. Flatten the cookie dough mixture onto a piece of parchment paper, add some chocolate chips on top and let it freeze for 1 hour.

  4. Cut the frozen cookie dough into small, bite-sized pieces.

  5. Once the ice cream base has fully frozen, remove from freezer and let thaw for 10 minutes.

  6. Add 2 tbsp of Bored Cow, and then creamifi the base.

  7. Once blended, make an indent in the center and fill it with cookie dough bites. Use the “respin” option on the Ninja Creami to mixin the cookie dough bites.

  8. Scoop the ice cream into your favorite ice cream bowl, top it with more cookie dough bites, chocolate chips, drizzle with chocolate, and enjoy!
