Ever wanted to eat cake for breakfast? We’ve got you covered with this recipe for Carrot Cake Pancakes from @veganhippiesol (bonus: vegetables included)! The secret ingredient for the batter and icing? Bored Cow Vanilla of course. These pancakes have all of the flavor of carrot cake, all of the health benefits of fresh carrots, and all of the nutrients of milk, but without the cow thanks to Bored Cow!

IN THIS RECIPE

Combine flours, sugar, baking powder, and spices.

Fold in shredded carrots, then Bored Cow and melted vegan butter.

Mix until batter has no clumps, being mindful not to over-mix.

For the icing, mix cream cheese and Bored Cow until smooth, then mix in powdered sugar.

Heat a skillet to medium heat, then spray/coat pan with cooking oil of choice.

Spoon 2-3 tbs of batter onto pan for each pancake. Once air bubbles form around edges, flip the pancakes (2-3 minutes).

Drizzle pancake stack with icing, and enjoy!
